When the evenings turn cooler, I want food that invites us to linger: a fragrant pot on the stove, vegetables roasting in the oven, or a warm sauce ready to spoon over dinner. Comfort does not have to mean cooking a completely separate meal for someone who prefers fewer carbohydrates.
