By Monika L. Jensen ·

There is something incredibly comforting about a bowl of homemade meatball soup. Tender, flavorful meatballs, fresh vegetables, herbs, tomatoes, and a rich beef broth come together in this easy recipe for a meal that is hearty enough for dinner but still filled with wholesome ingredients.
My Meatball Soup with Lamb combines Mediterranean-inspired flavors with the comfort of a traditional homemade soup. Fresh mint and cilantro brighten the lamb meatballs, while Parmesan, cumin, oregano, and fennel add layers of savory flavor. And if you follow a keto or low-carb lifestyle, I have included simple substitutions so you can enjoy all that flavor with fewer carbohydrates.
Why You'll Love This Meatball Soup
What I love most about this recipe is that it isn't just meatballs floating in broth. The soup is filled with carrots, onion, garlic, jalapeño, fire-roasted tomatoes, zucchini, corn, peas, herbs, and Parmesan. The meatballs are made with ground lamb, which gives them a wonderfully rich flavor. Fresh mint and cilantro balance that richness beautifully. It's comforting, colorful, filling, and easy enough to prepare for a weeknight dinner.

- 2 tablespoons fresh minced cilantro
- 1/4 cup finely shaved Parmesan
- 1 egg
- 1/2 teaspoon each cumin, oregano, and fennel seed
- Salt and pepper to taste
For the Soup
- 1 tablespoon oil, avocado oil preferred
- 2 medium carrots, diced
- 1 medium onion, diced
- 4 cloves garlic, minced
- 1/2 jalapeño, diced
- 1 can fire-roasted diced tomatoes
- 4 cups beef broth
- 1 Parmesan rind
- 1 small zucchini, diced
- 1 cup corn or peas
How to Make Homemade Meatball Soup
1. Make the Lamb Meatballs
In a large bowl, combine all of the meatball ingredients and mix until just combined. Using a small cookie scoop helps keep your meatballs approximately the same size so they cook evenly. Shape the mixture into approximately 1-inch round meatballs and set them aside. Try not to overwork the meat mixture. Gentle mixing helps keep the finished meatballs tender.
2. Build the Flavor of the Soup
Heat the oil in a large pot over medium heat. Add the carrots, onion, garlic, and jalapeño. Cook for approximately 5 minutes, stirring occasionally, until the vegetables begin to soften and become aromatic.
3. Add the Broth and Tomatoes
Pour in the beef broth and fire-roasted tomatoes. Add the Parmesan rind and bring the soup to a boil. Don't skip the Parmesan rind if you have one available. As it simmers, it adds a wonderful savory depth to the broth without making the soup heavy.
4. Cook the Meatballs
Gently lower the meatballs into the hot soup. Avoid stirring immediately because the meatballs need time to firm up. Once they float toward the surface, reduce the heat and allow the soup to simmer.
5. Add the Vegetables
Add the zucchini, corn, and peas. Continue cooking everything together in the simmering broth for approximately 10 minutes, or until the meatballs are thoroughly cooked and the vegetables are tender. Remove the Parmesan rind before serving. Finish each bowl with freshly chopped cilantro if desired.
How to Make Keto Meatball Soup
One of the things I emphasize in my cooking is that you don't necessarily need an entirely different recipe to eat low carb. Sometimes a few thoughtful substitutions are all it takes.
- Replace the cooked rice in the meatballs with approximately 3 tablespoons of almond flour. The almond flour helps bind the meatballs while adding a subtle nutty flavor.
- Replace the corn and peas with lower-carb vegetables such as edamame, green beans, bell peppers, or additional zucchini.
These simple changes create a satisfying low-carb meatball soup while keeping the flavors and textures that make the original recipe so comforting.
Why Lamb Makes Great Meatballs
Ground lamb works especially well in meatballs because of its rich, distinctive flavor. Herbs such as mint and cilantro are natural partners for lamb, while cumin, oregano, fennel, and Parmesan add warmth and complexity. If you've only made meatballs with beef or pork before, this is a delicious way to try something different.
Can I Make Meatball Soup Ahead of Time?
Absolutely. In fact, soup often tastes even better the next day because the herbs, vegetables, tomatoes, broth, and meatballs have had more time to develop together. Store leftover meatball soup in a covered container in the refrigerator and reheat gently on the stovetop. It's also an excellent recipe for meal prep when you want a satisfying homemade lunch or dinner ready to go.
What to Serve with Meatball Soup
This soup is substantial enough to serve as a complete meal. For a traditional meal, serve it with warm crusty bread or a simple side salad. For a keto or low-carb dinner, skip the bread and pair the soup with a fresh green salad or roasted vegetables.
A Comforting Soup with a Healthy Twist
This homemade lamb meatball soup is exactly the kind of recipe I love: comforting without being overly heavy and filled with fresh ingredients and bold flavors. You get tender lamb meatballs, vegetables, herbs, tomatoes, Parmesan, and a flavorful broth all in one bowl. Better yet, with a few easy substitutions, the same recipe can become a delicious keto-friendly dinner. If you're looking for an easy meatball soup recipe, healthy soup for dinner, lamb meatball recipe, or keto soup idea, save this one.
