- 1/4 cup avocado oil

- 2 cups chopped cherry tomatoes
- 1/4 cup sun-dried tomatoes

- 1 cup clam broth

- 3 tablespoons chopped fresh chives or parsley
How to Make Clams in Spicy Tomato Sauce
1. Clean the Clams
Place the clams in a salad spinner with the separator inserted. Add cold water until the tops of the clams are covered. Allow the clams to sit for approximately 20 minutes. The clams will take in the fresh water and naturally release sand and grit. Drain thoroughly. Discard any damaged clams and any clams that do not close when gently tapped.
2. Start the Spicy Tomato Sauce
Heat the avocado oil in a large cast-iron skillet or heavy pan over medium heat. Add the garlic, shallots, diced chili or chili flakes, and chopped chorizo. Sauté for approximately 2 minutes until fragrant. Add the tomato paste and stir it into the aromatics.
3. Add the Tomatoes
Add the chopped cherry tomatoes and sun-dried tomatoes. Cook for approximately 5 minutes, stirring occasionally, until the tomatoes begin to soften and release their juices. This creates the rich tomato base for the clam sauce.
4. Build the Broth
Pour in the dry white wine or vermouth and the clam broth. Add the butter and stir as it melts into the tomato mixture. The combination of wine, butter, tomatoes, clam broth, and chorizo creates a rich sauce that is perfect for dipping.
5. Steam the Clams
Add the cleaned clams to the skillet and cover. Cook for approximately 6 to 8 minutes, stirring occasionally, until the clams have opened. Discard any clams that remain closed after cooking.
6. Finish and Serve
Sprinkle the finished clams with freshly chopped chives or parsley. Serve immediately while everything is hot.
