You know the question. What should I make for dinner tonight? Sometimes cooking isn't even the difficult part. Deciding what to make is.
You want something flavorful, reasonably healthy and satisfying enough that nobody starts searching the refrigerator an hour later. If you are cooking for a family, it gets even more complicated. One person wants pasta, someone else is eating low carb, and another person suddenly announces they don't like the meal they loved last week.
The solution isn't making three separate dinners. It's having a collection of meals that are easy to adapt. That's also the philosophy behind my cookbook, The Balanced Plate: Healthy Recipes With Keto Alternatives. I created recipes that can work as traditional family dinners while giving you practical keto or low-carb substitutions when you want them.
If you're staring into your refrigerator wondering what to make tonight, start here.
1. Asian Pepper Steak Stir-Fry
Thinly sliced beef, peppers and onions come together quickly in a hot skillet. Serve it with steamed rice for a traditional dinner or cauliflower rice for a lower-carb version. Why it works: fast cooking, plenty of vegetables and very little cleanup.
2. Slow-Cooked Lamb Stew
Some evenings call for comfort food. Tender lamb simmered with vegetables and herbs gives you a rich dinner that tastes like you spent all day cooking. For a lower-carb version, use turnips, cauliflower or additional vegetables in place of potatoes.
3. Meatball Soup
A bowl of hearty meatball soup is one of my favorite answers to what's for dinner. You get protein, vegetables and broth in one bowl. Serve it with crusty bread for the family and skip the bread or use a keto alternative for anyone eating low carb.
4. Chicken Lettuce Wraps
Savory ground chicken with Asian-inspired seasonings wrapped in crisp lettuce makes an easy dinner that doesn't feel heavy. You can also serve the filling over rice for anyone who wants additional carbohydrates. This is exactly the kind of meal I love because one recipe can accommodate two ways of eating.
5. Herb-Crusted Rack of Lamb
Rack of lamb sounds like restaurant food, but it is surprisingly manageable at home. A flavorful herb crust does most of the work. Serve it with roasted vegetables, a green salad or cauliflower mash for an elegant low-carb dinner.
6. Creamy Coleslaw With Grilled Chicken
Coleslaw doesn't have to stay on the side of the plate. Add sliced grilled chicken and turn it into a fresh, crunchy dinner. A homemade dressing lets you control the sweetness and ingredients.
7. Braised Lamb Shank
This is the dinner for a night when you want the oven to do most of the work. Slow cooking transforms lamb shanks into incredibly tender meat while creating a rich sauce from the cooking juices. Serve with mashed potatoes traditionally or mashed cauliflower for a keto-friendly plate.
8. Palak Paneer
Palak paneer combines spinach, warm Indian spices and paneer cheese in a deeply flavorful sauce. It is naturally satisfying without relying on meat. Serve it with basmati rice or naan for a traditional meal, or enjoy it with cauliflower rice for a lower-carb alternative.
9. Clams in Spicy Tomato Sauce
Clams cook remarkably quickly. Add garlic, tomatoes, herbs and a little heat and you have a restaurant-style seafood dinner at home. Serve with toasted bread for dipping or simply enjoy the clams and sauce on their own for a lighter option.
10. Heirloom Tomato Soup
A great tomato soup can be dinner, especially with something alongside it. Pair it with a traditional grilled cheese sandwich for the family or a low-carb cheese crisp, protein or salad for a keto-friendly meal. Good tomatoes make an enormous difference here.
11. Stuffed Lamb Peppers With Tzatziki
Bell peppers make perfect edible containers. Fill them with seasoned lamb, herbs and vegetables and finish them with cooling tzatziki sauce. The peppers replace the need for bread or a heavy starch, making this an easy naturally lower-carb dinner.
12. Mussels in Black Bean Sauce
Mussels are another ingredient people often assume belongs only in restaurants. They don't. They cook in minutes and absorb tremendous flavor from black bean sauce, garlic and aromatics. Add steamed vegetables or a simple salad and dinner is finished.
13. Shepherd's Pie
Shepherd's pie is classic comfort food for a reason. Savory meat and vegetables topped with creamy potatoes make a complete meal in one dish. For a keto alternative, replace the potato topping with seasoned mashed cauliflower. Same dinner. Same table. No need to make two separate casseroles.
14. Cream of Mushroom Soup
Homemade mushroom soup has a depth of flavor canned soup simply cannot match. Use it as a light dinner with salad or pair it with roasted chicken. A lower-carb version is easy because mushrooms themselves are naturally relatively low in carbohydrates.
15. Lamb Kabobs
Kabobs solve several dinner problems at once. They're quick, customizable and easy to cook on the grill. Alternate seasoned lamb with peppers, onions, zucchini or mushrooms. Serve with rice or flatbread for one version and a large salad for the lower-carb plate.
16. French Onion Soup
Slowly caramelized onions create a soup with incredible depth. Traditionally, French onion soup gets its signature finish from bread and melted cheese. For a lower-carb version, reduce or omit the bread while keeping that beautiful melted cheese topping.
17. Seafood With Lemon Caper Sauce
Fish doesn't need twenty ingredients. A good piece of seafood with butter, lemon, capers and herbs can make an elegant dinner in less time than ordering takeout. Pair with vegetables, salad, rice or cauliflower couscous depending on how you're eating.
18. Mulligatawny Curry Soup
Mulligatawny brings together curry spices, vegetables and a wonderfully aromatic broth. It's an excellent way to make an ordinary weeknight feel completely different without relying on complicated techniques.
19. Pork Roast With Lemon and Herbs
A pork roast can give you dinner tonight and leftovers tomorrow. Season generously with garlic, lemon and herbs, then let the oven do the work. Roasted vegetables make an easy low-carb side.
20. Summer Berry Salad With Protein
Salad becomes dinner when you stop treating it like garnish. Start with leafy greens and berries, then add grilled chicken, salmon or another protein, nuts and a flavorful homemade dressing. You get sweet, savory, crunchy and fresh in every bite.
21. Cauliflower Cheese Soup
Cauliflower creates surprisingly creamy soup without requiring a large amount of starch. Add good cheese and seasoning and it becomes comfort food that also fits beautifully into a lower-carb meal plan.
22. Tortilla Soup
Chicken, tomatoes, spices and broth make tortilla soup deeply satisfying. Traditional toppings can include tortilla strips, while low-carb diners can use avocado, cheese, sour cream, cilantro and lime without the tortilla. Again, you don't need two dinners. You need one adaptable dinner.
23. Garlic Shrimp With Zucchini
Shrimp is one of my favorite emergency dinner ingredients because it cooks so quickly. Sauté it with garlic, olive oil, herbs and zucchini. Serve over pasta traditionally or spiralized zucchini for an easy keto alternative.
24. Beef With Roasted Vegetables
A good steak or sliced beef does not need an elaborate recipe. Season it properly, cook it correctly and surround it with roasted vegetables. If someone wants potatoes, add them to one side of the roasting pan. This is balanced cooking at its simplest.
25. Use Leftovers Intentionally
This may be the easiest dinner idea of all. Leftover roast chicken can become lettuce wraps. Steak can become a salad. Roasted vegetables can become soup. Lamb can become stuffed peppers. Good home cooking becomes much easier when every meal doesn't have to begin from zero.
How to Make Dinner Easier Every Night
Instead of planning seven completely unrelated dinners, choose meals that share ingredients. If you buy chicken, ground beef or lamb, bell peppers, onions, spinach, cauliflower, mushrooms, salad greens, fresh herbs and lemons, you can turn those ingredients into several completely different meals. That's much easier than purchasing a specialized grocery list for every recipe.
Keep three emergency dinners
Everyone should have three dinners they can make almost without thinking. Mine would follow this pattern: one quick skillet meal like pepper steak, shrimp or chicken lettuce wraps; one soup like meatball soup, tomato soup or cauliflower cheese soup; and one protein-and-vegetable dinner like chicken, fish, pork or steak with whatever vegetables are available. When the day gets away from you, you already know what to make.
What If Some People Are Keto and Others Aren't?
This is one of the biggest reasons I wrote The Balanced Plate. You shouldn't have to cook one dinner for someone following keto and another for everyone else. Build dinner around the protein, sauce and vegetables, then change the accompaniment.
For example, serve pepper steak with rice for the traditional option and cauliflower rice for the keto option. Lamb stew can be served with potatoes or with turnips and cauliflower. Chicken wraps work as rice bowls or lettuce cups. Shepherd's pie can be topped with potatoes or mashed cauliflower. Seafood can be paired with pasta or zucchini noodles. Curry can be served over basmati rice or cauliflower rice. A roast dinner can include potatoes for some and extra roasted vegetables for others.
This approach keeps everyone at the same table. And more importantly, it keeps the cook sane.
Looking for a Cookbook With Both Regular and Keto Options?
That's exactly why I created The Balanced Plate: Healthy Recipes With Keto Alternatives. I didn't want a cookbook where every recipe demanded that the entire family follow one diet. The recipes begin with good food. Then, where appropriate, I show you how ingredients can be adapted for a lower-carb or keto approach.
The cookbook includes 100-plus recipes, full-color finished-dish photographs, nutrition information per serving, practical cooking information and keto-friendly alternatives. My goal was to create the book I wanted in my own kitchen: one that could actually be used for everyday family meals. Because healthy food should still taste like dinner.
The Bottom Line
The next time you ask what should I make for dinner tonight, don't look for the perfect recipe. Look for something adaptable. A good weeknight dinner should taste great, use ingredients you can actually find and work for the people sitting at your table. That's what balanced cooking means to me. You can eat traditionally. You can make it low carb. You can make it keto. And you can still make one dinner everyone wants to eat.
