Healthy quinoa salad with chickpeas, cucumber, tomatoes and fresh cilantro by Chef Monika Jensen

Looking for a healthy quinoa salad that's fresh, colorful, and full of flavor? This easy quinoa salad combines fluffy quinoa, tender chickpeas, crisp cucumber, juicy tomatoes, sweet bell peppers, and fresh cilantro, all tossed in a bright homemade lime dressing.

It's the kind of recipe I love making when I want something light but satisfying. The vegetables provide freshness and crunch, while the chickpeas and quinoa make the salad substantial enough to enjoy as a light lunch or serve alongside your favorite protein.

The homemade dressing brings everything together with fresh lime juice, garlic, cumin, chili powder, and a touch of honey.

Best of all, this salad can be made ahead of time, making it a convenient choice for lunches, gatherings, or weekly meal preparation.

I've also included my lower-carb alternative using cauliflower rice and a few simple ingredient substitutions.

Chef Monika's Tips for the Best Quinoa Salad

Let the quinoa cool. Adding hot quinoa to the vegetables can soften the cucumber and tomatoes. Allowing it to cool helps maintain their fresh texture.

Use fresh lime juice. Freshly squeezed lime juice provides a brighter flavor than bottled juice.

Don't skip the herbs. Cilantro adds a fresh finish that complements the cumin and lime dressing.

Make it ahead. This salad develops even more flavor as it chills, making it an excellent option for meal preparation.

Add your favorite protein. Grilled chicken, shrimp, or fish can turn this colorful side dish into a more substantial meal.

Is Quinoa Salad Healthy?

Quinoa provides complex carbohydrates, fiber, and plant-based protein. Chickpeas contribute additional fiber and protein, while fresh vegetables add a variety of vitamins and minerals.

This recipe also uses an avocado-oil dressing instead of a heavy mayonnaise-based dressing.

As with any recipe, nutritional content depends on serving size and the exact ingredients used.

What to Serve with Quinoa Salad

This versatile salad pairs beautifully with grilled chicken, roasted salmon, halibut, shrimp, or other simple proteins.

It's also a colorful addition to a summer barbecue, picnic, or family gathering.

For a lighter meal, enjoy it on its own or over a bed of fresh greens.

How to Store Quinoa Salad

Store leftover quinoa salad in an airtight container in the refrigerator for up to 3–4 days, provided it has been cooled and refrigerated promptly.

For the freshest texture, keep the dressing separate when preparing the salad several days in advance.

Stir before serving and add a little fresh lime juice if needed.

Ingredients

  • 1 cup uncooked quinoa
  • 2 cups water
  • 1 can chickpeas, rinsed and drained
  • 1 medium cucumber, chopped
  • 1 bell pepper, chopped
  • 1 small red onion, chopped
  • ½ cup diced tomatoes
  • ¼ cup sliced grapes (optional)
  • ⅓ cup fresh cilantro, chopped
  • ¼ cup avocado oil, or your preferred cooking oil
  • ¼ cup fresh lime juice and zest
  • 2 garlic cloves, crushed
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1 tsp honey
  • Salt and freshly ground black pepper, to taste

Method

  1. Cook the Quinoa. In a medium saucepan, combine 1 cup of quinoa with 2 cups of water. Bring to a boil over medium heat, then reduce the heat and simmer uncovered for approximately 15 minutes, or until the quinoa has absorbed the water. Remove from the heat, fluff with a fork, and allow it to cool. Chef's Tip: Rinse the quinoa thoroughly before cooking if it isn't already pre-rinsed. This helps remove naturally occurring saponins, which can cause a bitter taste.
  2. Prepare the Fresh Vegetables. In a large serving bowl, combine the rinsed chickpeas, chopped cucumber, bell pepper, red onion, tomatoes, optional grapes, and fresh cilantro. Gently toss to distribute the ingredients evenly.
  3. Make the Lime Dressing. In a small bowl, whisk together the avocado oil, fresh lime juice and zest, crushed garlic, cumin, chili powder, honey, salt, and black pepper. Whisk until the dressing is well combined.
  4. Combine the Salad. Once the quinoa has cooled, add it to the bowl of vegetables and chickpeas. Pour the homemade lime dressing over the salad and gently toss until everything is evenly coated.
  5. Chill and Serve. For the best flavor, refrigerate the quinoa salad for approximately 30 minutes before serving. This allows the vegetables, quinoa, and chickpeas to absorb the flavors of the dressing. Serve chilled or at room temperature.

Cauliflower-rice lower-carb alternative

Traditional quinoa contains more carbohydrates than many people following a ketogenic diet prefer. Keep the fresh vegetables and lime dressing, with these substitutions:

  • Replace the quinoa with 2 cups of cooked cauliflower rice.
  • Substitute the chickpeas with edamame or green beans.
  • Replace the honey with a small amount of stevia, to taste.
  • Omit the grapes and add diced avocado instead.

Let the cooked cauliflower rice cool, then combine it with the vegetables and your chosen chickpea substitute. Whisk the dressing with stevia instead of honey, toss gently and chill as in the original method. Actual carbohydrates depend on the ingredients and portions used; this variation is not verified as strict keto.
