This version combines fresh spinach, mushrooms, hard-boiled eggs, Swiss cheese, roasted almonds and crisp bacon with a tangy warm dressing made from shallots, cider vinegar, honey and grain mustard. The result is savory, slightly sweet and full of contrasting textures.

For the Salad
- 8 cups fresh spinach
- 1 cup sliced button mushrooms
- 4 hard-boiled eggs, quartered
- 1 cup shredded Swiss cheese
- 1/4 cup roasted sliced almonds
For the Warm Bacon Dressing
- 8 slices bacon, cut into 1-inch pieces
- 1/4 cup finely chopped shallots
- 5 tablespoons cider vinegar
- 2 tablespoons honey*
- 2 tablespoons grain mustard
- 1/4 teaspoon salt
- Pepper to taste

How to Make Warm Spinach Salad
- Cook the bacon. Place the bacon in a skillet and cook over medium heat until crisp, about 6 to 8 minutes.
- Drain. Transfer the cooked bacon to a paper towel-lined plate and set aside.
- Boil the eggs. Place the eggs in a pot of cold water and bring to a boil. Cook for approximately 6 minutes for medium-cooked eggs or 7 to 8 minutes for hard-boiled eggs. Drain, peel and quarter.
- Keep some of the grease. Carefully remove most of the bacon grease from the skillet, leaving approximately 2 tablespoons behind.
- Saute the shallots. Add the chopped shallots to the skillet and saute over low heat until softened, about 1 to 2 minutes.
- Finish the dressing. Add the cooked bacon, cider vinegar, honey, grain mustard, salt and pepper. Stir together and gently heat until the bacon is evenly coated and the dressing is warm.
- Assemble the salad. In a large bowl, combine the fresh spinach, sliced mushrooms, shredded Swiss cheese and roasted almonds.
- Toss. Pour the warm bacon dressing over the spinach mixture and gently toss.
- Add the eggs. Add the quartered eggs just before serving.
- Serve immediately while the dressing is still warm.
Chef Monika's Tips
Don't pour boiling-hot dressing directly onto the spinach. You want the dressing warm enough to soften the leaves slightly while allowing the spinach to retain its fresh texture.
Fresh mushrooms work especially well in this salad because they absorb some of the warm dressing without becoming overly soft.
I also recommend adding the eggs after tossing the salad. That keeps the yolks intact and gives the finished dish a much prettier presentation.
For extra crunch, lightly toast the sliced almonds before adding them.
How to Make This Warm Spinach Salad Keto
The original recipe contains only a small amount of honey, but it is also the easiest ingredient to change if you're following a ketogenic or very low-carb diet.
Simply replace the 2 tablespoons of honey with a keto-friendly sweetener. Start with a small amount and taste the dressing before adding more, since different sweeteners vary considerably in sweetness.
Everything else in the salad — spinach, eggs, bacon, mushrooms, Swiss cheese and almonds — works beautifully in a low-carb meal.
What to Serve With Warm Spinach Salad
This salad is substantial enough for a light meal, but it also pairs especially well with protein.
Try serving it alongside grilled steak, roasted chicken, pork tenderloin, lamb chops or grilled salmon.

You can prepare most of the ingredients ahead of time.
