Let me start by saying I was a true carb lover.

Pasta, bread, rice, you name it, I loved it. However, after having two children, I found myself struggling. My energy was low, my weight fluctuates constantly, and I didn’t feel like myself anymore. I wasn’t looking for a quick fix or a trendy diet. Instead, I was searching for something sustainable, something that would bring me back into balance not just physically, but mentally and emotionally too.

That’s when I started exploring low-carb living.

At first, there were small changes. I began swapping pasta for zucchini noodles, cutting back on sugar, and skipping the breadbasket at dinner. Gradually, I started to notice the difference. My energy returned, and I didn’t feel bloated or sluggish after meals. My clothes fit better, and my mood became more stable. Most importantly, I felt like I had control again, not in a restrictive way, but in an empowered way.

I didn’t call it “keto” at first. It was simply a way of eating that made me feel good. Over time, as I learned more about how our bodies process food, especially carbs and sugar, I realized I had naturally fallen into what’s now widely recognized as the ketogenic lifestyle.

Fast forward 20 years, and I can honestly say this is not a diet for me. Rather, it’s a lifestyle.

I’ve stayed at a consistent, healthy weight. My energy levels are strong and steady, even when life gets hectic. And the best part? I still enjoy delicious, satisfying food, just in a way that fuels me, not drains me.

That’s why I created my cookbook, The Balanced Plate – Healthy Recipes with Keto Alternatives, to share this lifestyle in a realistic and approachable way. It’s not about perfection or restriction; instead, it’s about balance and finding what works for your body, your routine, and your taste buds.
