Best Ever Bruschetta on Parmesan Sourdough Baguette
Sweet Campari tomatoes, fresh basil, garlic and balsamic spooned over crispy Parmesan sourdough toasts. My favorite Italian-inspired appetizer, with low-carb alternatives.
By Chef Monika Jensen ·

There is something irresistible about a perfectly toasted slice of sourdough baguette topped with juicy tomatoes, fresh basil, garlic, and a drizzle of balsamic glaze.
My Best Ever Bruschetta takes this classic Italian appetizer to another level with two ingredients I absolutely love: sweet Campari tomatoes and a crispy Parmesan-crusted sourdough baguette.
Instead of using a traditional French baguette, I prefer sourdough for its slightly tangy flavor and wonderful texture. When brushed with garlic-infused olive oil, sprinkled with Parmesan cheese, and toasted until golden, it becomes the perfect base for the fresh tomato topping.
The combination is simple but incredibly flavorful. Sweet tomatoes, fragrant basil, fresh garlic, and balsamic vinegar come together in a delicious topping that tastes even better after a little time to marinate.
Whether you're entertaining friends, preparing a holiday appetizer, or simply enjoying a glass of wine with something delicious, this bruschetta is always a beautiful addition to the table.

Chef Monika's Tips for Perfect Bruschetta
Why I Prefer Campari Tomatoes
Campari tomatoes are one of my favorite choices for bruschetta because of their natural sweetness and full tomato flavor. Their juicy texture works beautifully with fresh basil and garlic.
If your tomatoes are especially juicy, drain the excess liquid before assembling the bruschetta.
Why Sourdough Makes Better Bruschetta
Traditional bruschetta is often served on rustic Italian bread, but I love the flavor and texture of a sourdough baguette. The slight tanginess of sourdough complements the sweet tomatoes, while the toasted exterior provides the perfect crunch.
Adding Parmesan cheese creates a flavorful golden crust that makes every bite even better.
Don't Skip the Marinating Time
Allowing the tomatoes to rest with the garlic, basil, olive oil, and balsamic vinegar gives the flavors time to develop. Even 15 minutes makes a noticeable difference.
Assemble Just Before Serving
For the best texture, keep the tomato topping and toasted sourdough separate until you're ready to serve. This prevents the bread from absorbing too much moisture.
Low-Carb and Keto-Friendly Bruschetta Alternatives
If you're following a low-carb or ketogenic lifestyle, you can still enjoy the delicious tomato and basil topping. Instead of sourdough, try:
- Keto-friendly baguette: Use your favorite low-carb bread, toasted with olive oil and Parmesan.
- Grilled zucchini rounds: Slice zucchini into thick rounds, grill until tender, and top with the tomato mixture.
- Parmesan crisps: Spoon a small amount of the tomato topping over crispy baked Parmesan rounds just before serving.
For a lower-sugar version, omit the balsamic glaze or choose one without added sugar. Tomatoes naturally contain carbohydrates, so adjust your portions according to your dietary goals.
What to Serve with Bruschetta
This bruschetta is a wonderful appetizer for almost any occasion. Serve it alongside a fresh green salad, grilled seafood, roasted vegetables, or an Italian-inspired dinner.
It's especially delicious as part of an appetizer platter with olives, cheese, and fresh vegetables.
Can You Make Bruschetta Ahead of Time?
Absolutely. You can prepare the tomato topping several hours ahead and store it in an airtight container in the refrigerator.
For the best results, prepare the sourdough toasts separately and assemble everything shortly before serving. If the tomato mixture releases additional liquid while refrigerated, drain some of it before spooning the topping onto the bread.

Best Ever Bruschetta on Parmesan Sourdough Baguette
Fresh Campari tomato bruschetta with basil, garlic, balsamic vinegar and crispy Parmesan sourdough baguette. Includes 15 minutes of marinating time.

Ingredients
- 1½ pounds fresh Campari tomatoes, diced
- ⅓ cup fresh basil leaves, chopped
- 5 garlic cloves, divided
- 1 tablespoon balsamic vinegar
- 2 tablespoons extra virgin olive oil (for the topping)
- ½ teaspoon sea salt
- ¼ teaspoon freshly ground black pepper
- Balsamic glaze, optional, for serving
- 1 sourdough baguette
- 3 tablespoons extra virgin olive oil (for the toasts)
- ⅓ cup shredded Parmesan cheese
Method
- Prepare the Campari tomatoes. Wash and dice the Campari tomatoes into small, bite-sized pieces. Drain any excess liquid, then transfer them to a medium mixing bowl so the toasts don't become soggy.
- Chop the fresh basil. Stack the basil leaves, roll them into a small bundle and slice into thin ribbons with a sharp knife. Add the basil to the tomatoes.
- Make the garlic-infused olive oil. Finely mince the garlic. Combine 1 teaspoon of the minced garlic with the 3 tablespoons of olive oil reserved for the toasts and set aside to infuse. Add the remaining garlic to the tomato mixture.
- Season and marinate the tomatoes. Add 2 tablespoons olive oil, 1 tablespoon balsamic vinegar, ½ teaspoon sea salt and ¼ teaspoon black pepper. Stir gently and marinate for at least 15 minutes.
- Prepare the Parmesan sourdough baguette. Preheat the oven to 400°F (200°C). Slice the sourdough baguette diagonally into about ½-inch slices and arrange on a parchment-lined baking sheet. Brush both sides lightly with the garlic oil and sprinkle the tops with Parmesan.
- Toast until golden. Bake for about 5 minutes. For an extra golden Parmesan crust, broil for another 1 to 2 minutes, watching carefully so the bread doesn't burn.
- Assemble the bruschetta. Arrange the warm toasts on a platter, spoon the marinated tomato mixture over each one and finish with a light drizzle of olive oil and, if desired, balsamic glaze. Serve immediately while the bread is crisp.
