It’s one thing to feel the impact of something personally. It’s another to watch it ripple into the lives of others. That’s exactly what has happened since I started sharing recipes and stories from The Balanced Plate: My Keto Cookbook.
When I first committed to low-carb eating over 20 years ago, it was for my health. I wanted more energy, better focus, and a way to maintain my weight without constant restrictions. Over time, this way of eating became second nature. It wasn’t a diet. It was nourishing my body with real, satisfying food that I actually enjoyed.
The most rewarding part has been hearing how my recipes help others. Friends who never thought they could stick to a low-carb lifestyle are surprised by how simple and flavorful the meals are. Some say, “I finally feel like I can cook again without overthinking everything,” or “My kids didn’t even notice it was keto!” That makes me smile every time.
One compliment I hear often is that the recipes are easy to follow, approachable, and full of flavor. I never wanted this book to feel intimidating. I want people to open it and think, “I can make that tonight.” Food should feel good while you’re making it, serving it, and sharing it.
I think this mindset comes from my upbringing. My dad was always cooking, and I was his “sous chef,” helping, asking questions, and writing recipes down. He shared his knowledge so openly, and I have fond memories of those kitchen moments…with some wine, of course.
Low-carb living doesn’t have to be boring or complicated. With the right ingredients, a little knowledge, and a few smart swaps, you can enjoy meals that are both delicious and nourishing. Most importantly, it’s a lifestyle you can actually maintain.
