There’s something magical about a perfectly cooked lobster pasta, rich, tender lobster meat coated in a light tomato and vermouth sauce that tastes like a night out by the ocean. This dish feels indulgent but is surprisingly easy to make at home. - 2 (8 oz) lobster tails

- 1 tbsp olive oil

- 1 chopped onion

- 3 cloves garlic

- 1 tbsp tomato paste

- ½ cup vermouth

- 1 cup tomato purée

- ¼ cup heavy cream (optional)

- 1 package spaghetti noodles* or shirataki tofu noodles or zucchini noodles

- 2 tbsp fresh tarragon (for garnish)

Instructions

- Bring a large pot of salted water to a boil and cook pasta until al dente, about 8 minutes. Drain and set aside.

- Cut raw lobster tails in half lengthwise. Steam in 2 inches of water for 3 minutes, then remove meat and chop into bite-sized pieces.

- In a large saucepan, heat olive oil over medium heat. Add onion and garlic; sauté 2–3 minutes.

- Stir in tomato paste and cook briefly. Add vermouth to deglaze the pan, followed by the tomato purée and lobster meat.

- Simmer gently for 2 minutes, then stir in heavy cream if desired. Combine with pasta and garnish with fresh tarragon.

For a low-carb option, substitute traditional spaghetti with shirataki tofu noodles or zucchini noodles. This swap keeps the flavor rich while reducing carbs, perfect for anyone following a keto or balanced lifestyle.
